Ultimate Chocolate Chip Cookies
This recipe is adapted from The Superfun Times Vegan Holiday Cookbook. These cookies are super good. If you want to make them even better, substitute half the chocolate chips for peanut butter chips. Have fun!
- 1/2 cup brown sugar
- 1/2 cup melted coconut oil
- 1/3 cup applesauce
- 2 teaspoons cornstarch
- 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chocolate chips
- Preheat your oven to 350 degrees F.
- In a large bowl, mix together the sugar, oil, applesauce, and cornstarch. Mix this really well, then add the vanilla.
- Add 1 cup of the flour, the baking soda, and the salt. Mix really well. Add the remaining 1/2 cup flour. Fold in the chocolate chips.
- Roll the dough into ping-pong sized balls and flatten them out in your hand. Place on a baking sheet and bake for 9 minutes. Let them cool for 5 minutes, then transfer to a baking rack.
