BEST Banana Bread!

This recipe originally from Kazoo magazine is the best I've made for banana bread (and I've tried a lot!). I modified it a lot but it's still really good!

Ingredients:


  • 1 1/3 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/2 tsp. salt
  • 3/4 cup coconut sugar 
  • 2 chia eggs (1 chia egg = 1tbsp chia seeds + 3 tbsp water)
  • 1/2 cup avocado oil
  • 3 overripe bananas, mashed
  • 2 Tbsp sour cream or plain yogurt
  • 1 tsp. vanilla
  • 1 cup chocolate chips

Step 1: Preheat oven to 325 degrees and grease a 9x5 inch loaf pan.

Step 2: Combine the dry stuff. Stir the flour, baking soda, cinnamon, and salt, then set aside.

Step 3: In a big bowl, beat the sugar and chia eggs for a bit.

Step 4: Add the oil with your mixer on low speed.

Step 5: On low speed, mix in the mashed bananas, sour cream, and vanilla.

Step 6: By hand, stir in the dry ingredients.

Step 7: Pour the batter in the pan and back for 60 to 75 minutes.
